My son loves making these… and I don’t mind if he makes a double batch. He got the recipe from his friend’s mom (thank you Eileen Funk!) and they’ve remained a favorite.
I like to cut them up, wrap the little bars in plastic wrap and keep them handy for packing lunches. (Yes, although we homeschool we still pack lunches some days – field trips, swimming lesson days, music days, etc.) And they are great ‘in between’ snacks when supper is going to be late.
These are easily adaptable as well. If you like other additions like coconut, or white chocolate chips, or dried cranberries… go for it!
EAT MORE BARS
1 cup crunchy peanut butter
¾ cup corn syrup or honey
1½ cup oats
1 cup chocolate chips
Optional instead of oats:
1 cup nuts
1 cup raisins or craisins
Adding 1/2 cup hemp really boosts the protein and healthy oils in this snack as well!
Melt the syrup and peanut butter in the microwave for a few seconds at a time until it is easy to stir it smooth. Add the remaining ingredients and mix well. Chocolate chips will melt. Press into greased 8”x8” pan and cool. Cut into small bars to serve.
